Tráng Kìm phở — hand-made local chicken noodle soup

If you only eat one breakfast in Quản Bạ, make it Tráng Kìm phở. It is made with free-range local chicken: a clear, gently sweet broth, and rice noodles that are steamed sheet by sheet and cut by hand right in the shop, so they are soft, springy and taste of fresh rice. You can watch the whole process, from ladling the batter and steaming the sheets to slicing the noodles.
Many travellers say this bowl is a match for Hanoi phở — it truly deserves a place on any Hà Giang must-eat list. The Tráng Kìm area is only about 500 m from the Quản Bạ paragliding site, so it is perfect for breakfast before your flight or right after you land.
Egg bánh cuốn

Unlike the lowland version, Hà Giang's bánh cuốn (steamed rice rolls) is spread thin, has an egg cracked into the middle and is then rolled up. It is served with hot bone broth instead of the usual dipping fish sauce, plus a little spring onion and herbs. Perfect for breakfast before you hit the road.
